Warm White Oyster (Pleurotus ostreatus) is one of the most forgiving mushrooms you can grow, which makes it a rewarding first crop in your Flush. It fruits quickly, clusters generously and rarely asks much of you.
What to expect
Expect soft, overlapping clusters of pale cream to white caps on short, tender stems. The flavour is mild and delicate with a faint sweetness and a gentle savoury note, and the texture turns silky and a little meaty once cooked. Warm White Oysters are a genuine all-rounder in the kitchen — quick to sauté, lovely in a stir fry, folded through pasta, or crisped in a hot pan with a little butter and garlic.
Growing in your Flush
In Basic mode, choose the Warm White Oyster preset and the cabinet holds 23°C, 88% humidity and around 650 ppm CO₂ for you. In Advanced mode, set those same targets from Set targets on the Home screen.
Once your block starts pinning, keep the fresh air steady. Higher CO₂ encourages long stems and small caps, while plenty of fresh air at around 650 ppm gives you the broad, well-formed caps you want. A little indirect light helps the clusters take shape and colour up. From pinning you can usually expect a first flush within about a week to two weeks. Harvest just before the cap edges flatten out and begin to turn upward.
Harvest & beyond
Pick your cluster while the caps are still slightly curled under, twisting it away from the block so no stem is left behind. After harvesting, let the block rest and keep the same conditions running. A well-treated block will often push a second, and sometimes a third, smaller flush over the following weeks.
