Snow White Oyster (Pleurotus ostreatus) is one of the most forgiving mushrooms you can grow, which makes it a lovely first flush in your Flush. It pins readily, grows fast and rewards you with clean white clusters within a week.

What to expect

Snow White Oyster forms tight clusters of pure white to ivory caps on short, tender stems, opening into the soft fan shape oysters are known for. The flavour is mild and gently savoury with a faint sweetness, and the texture stays silky and a touch meaty once cooked. It suits almost anything — quick stir-fries, a hot pan with butter and garlic, folded through pasta, or dropped into soups and broths where it soaks up flavour beautifully.

Growing in your Flush

In Basic mode, choose the Snow White Oyster preset and the cabinet holds 16°C, 88% humidity and around 650 ppm CO₂ for you. In Advanced mode, set those same targets from Set targets on the Home screen.

Little pinheads usually appear within a few days and grow quickly. Fresh air matters here: with CO₂ kept low around 650 ppm you’ll get broad, well-formed caps on short stems, whereas stale, high-CO₂ air pushes long stems and small caps. A little indirect light helps the clusters form and colour up. Expect your first flush around 5 to 7 days from pinning. Harvest just before the caps flatten out fully and while their edges are still slightly curled.

Tip: Harvest the whole cluster in one go by twisting it gently from the block rather than picking individual mushrooms — it keeps the block tidy and encourages a clean second flush.

Harvest & beyond

Twist each cluster away at the base, or slice it cleanly where it meets the block. After harvesting, keep the block in the Flush and let it rest for a week or so — a well-watered block will very often push a second, and sometimes a third, flush. Yields taper with each round, so enjoy the first one at its best.
