Phoenix Oyster (Pleurotus pulmonarius) is a fast, forgiving oyster mushroom that fruits in warm-natured clusters, making it one of the most rewarding first grows in a Flush.

What to expect

Phoenix Oysters grow in overlapping, shelving clusters of pale tan to soft grey-brown caps, typically a little lighter and thinner-fleshed than blue or pearl oysters. The flavour is mild, delicate and gently nutty, with a tender bite that firms up nicely once cooked. They’re a versatile kitchen mushroom — lovely torn into a hot pan and sauteed in butter, folded through a stir-fry, or crisped at the edges as a side. Cook them through rather than eating raw, and they’ll reward you with a satisfying, savoury depth.

Growing in your Flush

In Basic mode, choose the Phoenix Oyster preset and the cabinet holds 22°C, 88% humidity and around 650 ppm CO₂ for you. In Advanced mode, set those same targets from Set targets on the Home screen.

Once the block is exposed to fruiting conditions, small pins usually appear within a few days and mature over roughly one to two weeks to first flush. Good fresh air matters: the Flush’s low CO₂ target encourages broad, well-formed caps, whereas stale, high-CO₂ air pushes long stems and small caps. Oysters also pin better with light, so the cabinet’s indirect glow is plenty — no direct sun needed. Harvest just as the cap edges flatten out and before they begin to curl upward.

Tip: Harvest the whole cluster in one twist-and-pull rather than picking single caps — you’ll get cleaner blocks, fewer dropped spores, and the next flush pins more evenly.

Harvest & beyond

Pick the entire cluster while the caps are still slightly curled under, twisting gently at the base so you lift the clump cleanly away from the block. After the first flush, give the block a short rest at the same settings and keep it lightly moist — a well-hydrated block will very often push a second flush a week or two later. A third, smaller flush is common too before the block is spent.
