Golden Enoki (Flammulina velutipes) is the golden, full-flavoured cousin of the pale enoki you see in shops. It is a rewarding grow in your Flush, turning out delicate clusters that look and taste far better than anything from a supermarket shelf.
What to expect
Golden Enoki grows as a dense bouquet of long, slender stems topped with small caramel to golden-brown caps. The flavour is mild and lightly fruity with a savoury edge, and the texture is pleasantly crisp and noodle-like — enoki keeps a gentle bite even after cooking. Use whole clusters in soups, hot pots, ramen and stir-fries, or scatter the raw stems through a salad. Little Acre rates this variety as intermediate, so it is a nice step up once you have a flush or two behind you.
Growing in your Flush
In Basic mode, choose the Golden Enoki preset and the cabinet holds 15°C, 90% humidity and around 1250 ppm CO₂ for you. In Advanced mode, set those same targets from Set targets on the Home screen.
Enoki likes it cool and pins in tight clusters. The Flush preset holds CO₂ a little high on purpose: more CO₂ and dimmer light draw the stems out long and slender and keep the caps small and tidy, which is the classic enoki look, while very fresh, low-CO₂ air gives shorter stems and broader, darker caps. Give it only modest ambient light and expect around one to two weeks to your first flush. Harvest once the stems are long and the caps are still small and rounded.
Harvest & beyond
Harvest by gripping the whole cluster low at the base and twisting it away cleanly, before the caps open and flatten. Trim off any block material clinging to the base, then rest the block back in the Flush. A rested block will often push a second, smaller flush a couple of weeks later.
